大家好,我是小高姐,今天我们来做柳叶包
Hello everyone, I am Xiao Gao Jie. Today we will make some leaf-shaped buns.
xiān lái zhǔn bèi xiàn liào
先来准备馅料
First we will prepare the filling.
sān gè xiǎo yáng cōng
三个小洋葱
Three small yellow onions.
qù pí
去皮
Peel the skin.
qiè suì
切碎
Then chop.
yǒu yī xiē dà kē lì yě bù yào jǐn
有一些大颗粒也不要紧
It is OK, if there are some big pieces of onions.
guō lǐ dào yóu
锅里倒油
Pour oil.
fàng rù yáng cōng
放入洋葱
Put onions.
dà huǒ chǎo dào yáng cōng tòu míng zhī hòu zài jì xù chǎo yī huì
大火炒到洋葱透明之后,再继续炒一会
Continue to cook the onions over high heat, after they turn transparent.
kàn dào yǒu yī diǎn jiāo huáng de shí hòu huǒ diào xiǎo
看到有一点焦黄的时候,火调小
Lower the heat, when onions start to turn brown.
fàng rù diào liào
放入调料
Season the onions.
bái hú jiāo fěn
白胡椒粉
White pepper,
wǔ xiāng fěn
五香粉
five spice powder,
shēng jiāng
生姜
ginger,
yī sháo bàn shēng chōu
一勺半生抽
1.5 tablespoons of regular soy sauce,
yī diǎn diǎn háo yóu
一点点蚝油
a little oyster sauce,
zuì hòu lái yī diǎn lǎo chōu
最后来一点老抽
and finally some dark soy sauce.
xiǎo huǒ bǎ diào liào chǎo xiāng
小火把调料炒香
Cook the spices till fragrant.
xiàn liào de suǒ yǒu diào liào dōu fàng zài zhè lǐ le hòu miàn bù zài jiā diào liào le
馅料的所有调料都放在这里了,后面不再加调料了
All seasoning for the filling are put into the onions, no more seasoning added later.
guān huǒ fàng liáng
关火,放凉
Off the heat and let it cool.
dài yī diǎn féi ròu de niú ròu suì
带一点肥肉的牛肉碎
Medium ground beef.
yòng qí tā ròu suì yě kě yǐ
用其它肉碎也可以
Any other ground meat is OK too.
fàng rù chǎo xiāng bìng qiě fàng liáng de yáng cōng
放入炒香,并且放凉的洋葱
Add cooled onions.
yòng shǒu bàn yún rán hòu cháo yī gè fāng xiàng jiǎo gěi niú ròu shàng jìn
用手拌匀,然后朝一个方向搅,给牛肉上劲
Mix by hand, and then stir in one direction.
kàn dào lā sī jiù kě yǐ le
看到拉丝就可以了
Stop stirring when you see the beef fibre.
zhè shí hòu de ròu xiàn yīng gāi shì piān xián yī xiē de
这时候的肉馅应该是偏咸一些的
The meat should be salty at this stage.
rú guǒ nǐ jué dé xián wèi bù gòu de huà kě yǐ bǔ yī diǎn diǎn yán
如果你觉得咸味不够的话,可以补一点点盐
If you feel it is not salty enough, add salt.
yī xiē cōng
一些葱
Some green onions.
xiān huà jǐ dāo
先划几刀
Slice first.
zài qiè suì
再切碎
Then chop.
fàng dào niú ròu zhōng bàn yún
放到牛肉中拌匀
Mix with beef.
ròu xiàn jiù zhǔn bèi hǎo le wǒ men kāi shǐ hé miàn
肉馅就准备好了,我们开始和面
The beef filling is ready. We will make the dough.

All purpose flour,
pào dǎ fěn
泡打粉
baking powder,
shuǐ

water,
hé jiào mǔ
和酵母
and yeast.
jīn tiān yòng de shì yī cì fā jiào de fāng fǎ
今天用的是 一次发酵的方法
We are going to ferment the dough only once.
yī cì fā jiào gēn liǎng cì fā jiào xiāng bǐ tā de fā jiào shí jiān duǎn
一次发酵跟两次发酵相比,它的发酵时间短
Compared to double fermentation process, One fermentation process is quicker.
jiào mǔ fán zhí de shù liàng xiāng duì shǎo
酵母繁殖的数量相对少
As a result, yeast does not multiply as much,
zuì hòu fā jiào chǎn shēng qì pào de lì liàng huì ruò yī xiē
最后发酵产生气泡的力量会弱一些
and leavening effect is not as strong.
pào dǎ fěn qǐ yī gè bǔ chōng fā pào zuò yòng
泡打粉起一个补充发泡作用
Baking powder acts a supplement leavening agent to the yeast.
tōng cháng ne róu chéng miàn tuán kàn bù dào gàn fěn de shí hòu wǒ huì ràng nǐ tíng xià lái táng yī táng zài róu
通常呢揉成面团,看不到干粉的时候,我会让你停下来,饧一饧再揉
When the dough is formed, I usually ask you to stop kneading.
jīn tiān ne wǒ men duō róu yī huì bǎ miàn tuán róu jūn yún yī xiē
今天呢我们多揉一会,把面团揉均匀一些
But today, let's knead the dough for 3 more minutes,
rán hòu gài shàng gài zi táng miàn fēn zhōng
然后盖上盖子饧面10分钟
and then rest the dough for 10 minutes.
fēn zhōng hòu qīng qīng zhěng lǐ yī xià
10分钟后,轻轻整理一下
10 minutes later, gently knead it.
miàn tuán jiù guāng huá le
面团就光滑了
It becomes smooth.
miàn tuán gāng gāng róu guò miàn jīn yǒu yī diǎn jǐn
面团刚刚揉过,面筋有一点紧
Right after kneading, the gluten is very tight.
sōng chí fēn zhōng rán hòu jìn xíng xià yī bù cāo zuò
松弛5分钟,然后进行下一步操作
Relax it for 5 minutes before moving on to the next step.
wǒ men yào zài jiào mǔ hái méi yǒu wán quán fán zhí qǐ lái
我们要在酵母还没有完全繁殖起来
All the kneading, rolling and wrapping actions have to be done before the yeast generates lots of bubbles.
yě jiù shì méi yǒu chǎn shēng dà liàng qì pào zhī qián bǎ miàn tuán zhěng lǐ hǎo
也就是没有产生大量气泡之前把面团整理好
In other words, we have to finish working on the dough without bubbles inside,
zhè yàng kě yǐ shěng qù le pāi qì de bù zhòu
这样可以省去了拍气的步骤
which eliminates the de-gas step, also produces a smoother surface.
cāo zuò qǐ lái bǐ jiào jiǎn dān ér qiě bǐ jiào kuài
操作起来比较简单,而且比较快
Besides one fermentation process is quicker.
wǒ gěi nǐ de fēn liàng dà gài kě yǐ zuò gè bāo zi
我给你的分量大概可以做16个包子
The recipe yields 16 buns.

Flattened.
héng zhe gǎn yī xià shù zhe gǎn yī xià
横着擀一下,竖着擀一下
Roll it horizontally first, then vertically.
bāo zi dǐ jiù gǎn chū lái le
包子底就擀出来了
The base of the wrapper is ready.
rán hòu xiàng gǎn jiǎo zi pí yī yàng yī biān zhuǎn yī biān gǎn
然后像擀饺子皮一样,一边转一边擀
Then roll it as to make dumpling wrap, turn and roll, then repeat.
bǎ bāo zi biān yuán dǎ báo yòng lái niē zhě zi
把包子边缘打薄用来捏褶子
The edge of the wrapper is thinner for folding the pleats.
dǎ shàng xiàn liào
打上馅料
Add filling.
zuì shàng miàn niē qǐ lái
最上面捏起来
Pinch the top.
bǎ zhè gè zhě zi cóng cè miàn zhuǎn dào shàng miàn lái
把这个褶子从侧面转到上面来
Turn it from the side to the top.
cháo yòu biān niǔ yī xià
朝右边扭一下
Then move it towards the right,
miàn pí jiù duō chū lái le yī gè zhě zi
面皮就多出来了一个褶子
which products a fold.
bǎ zhè gè zhě zi niē qǐ lái
把这个褶子捏起来
Pinch it together.
zài cháo zuǒ biān niǔ yī xià yòu chū xiàn yī gè zhě zi
再朝左边扭一下,又出现一个褶子
Next, move it to the left,
yě niē qǐ lái
也捏起来
Pinch the fold as well.
jiù zhè yàng yòu biān niǔ yī xià zuǒ biān niǔ yī xià
就这样,右边扭一下,左边扭一下
Repeat.
bāo zi hěn róng yì jiù bāo hǎo le
包子很容易就包好了
A leaf-shaped bun is made.
zhěng xíng hǎo zhī hòu kāi shǐ fā jiào miàn pí
整形好之后,开始发酵面皮
Now we start the dough fermentation.
fā jiào shí jiān xiāng duì zhǎng yī diǎn yī gè bàn xiǎo shí
发酵时间相对长一点,一个半小时
It takes relatively longer time, one and half an hour.
wǒ men gěi tā gài shàng gài zi
我们给它盖上盖子
Cover it.
yī gè bàn xiǎo shí zhī hòu miàn pí yǐ jīng fā qǐ lái le
一个半小时之后,面皮已经发起来了
1.5 hours later, the buns grow bigger.
liáng shuǐ shàng guō zhēng
凉水上锅蒸
Start with cold water.
shuǐ shēng wēn de guò chéng zhōng hái kě yǐ zuì hòu fā dà yī diǎn diǎn
水升温的过程中,还可以最后发大一点点
The buns will continue to grow when the water is heating up.
kàn dào zhēng qì shàng lái zhī hòu huǒ diào xiǎo zhēng fēn zhōng
看到蒸汽上来之后,火调小。蒸15分钟
Turn the heat on medium low when steam rises up on the top of the steamer. Steam for 15 minutes.
zhēng hǎo zhī hòu děng jǐ fēn zhōng xiān gè xiǎo fèng ràng zhēng qì pǎo yī pǎo
蒸好之后,等几分钟掀个小缝让蒸汽跑一跑
After steamed, wait a few minutes then lift the cover to release the steam.
zhēng hǎo de bāo zi yī gè yī gè yuán gǔ gǔ de bù huì chū xiàn tā xiàn
蒸好的包子一个一个圆鼓鼓的,不会出现塌陷
The size of the buns has grown much bigger. And they did not collapse.
miàn pí hěn róu ruǎn
面皮很柔软
The wrap is very soft.
niú ròu xiàn lǐ yǒu hěn duō chǎo guò de yáng cōng chī qǐ lái fēi cháng de xiāng
牛肉馅里有很多炒过的洋葱,吃起来非常的香
Ground beef, mixed with lots of fried onion, tastes very juicy and delicious.
zhè shì yī gè bǐ jiào jiǎn dān de bāo zi shí pǔ
这是一个比较简单的包子食谱
This is a simple steamed bun recipe.

The leaf-shaped buns are easy to make.

One fermentation process takes less time,
ér qiě yě shěng qù le pái qì de bù zhòu
而且也省去了排气的步骤
and also eliminates the step of de-gas.
