我们先来和面
Let's make the dough first.

Let the yeast absorb water first.

nǐ kě yǐ liú yī diǎn shuǐ bù yào dōu dào jìn qù xū yào de shí hòu zài jiā
你可以留一点水不要都倒进去,需要的时候再加
You can save a little water, add it when you need it later.
dà gài bǎ shuǐ hé gàn miàn fěn hùn hé jūn yún
大概把水和干面粉混合均匀
Mix water and dry flour.
zhè shì yī gè fēi cháng ruǎn yě fēi cháng zhān shǒu
这是一个非常软,也非常粘手
This is a very soft and very sticky dough,
dàn shì hái kě yǐ chéng tuán de yī gè miàn tuán
但是还可以成团的一个面团
but it can form into a ball.
táng miàn fēn zhōng
饧面20分钟
Rest it for 20 minutes.
fēn zhōng zhī hòu shǒu dǎ shī zài róu miàn jiù bù huì zhān shǒu le
20分钟之后,手打湿再揉面,就不会粘手了
After 20 minutes, wet hands first and knead it so your hands won't stick to the dough.
shāo wēi róu miàn yī liǎng fēn zhōng
稍微揉面一两分钟
Knead it for a minute or two.
miàn tuán de biǎo miàn biàn guāng huá jiù hǎo
面团的表面变光滑就好
Stop when it becomes smooth.
táng miàn yī gè bàn xiǎo shí yǐ shàng
饧面一个半小时以上
Rest the dough for at least 1.5 hours.
ràng miàn jīn wán wán quán quán dì fàng sōng
让面筋完完全全地放松
Let gluten relax completely.
xiān pào yī diǎn xiā rén
先泡一点虾仁
Soak some shrimp first.
yòng yī bàn de luó bo jiù gòu le
用一半的萝卜就够了
Half of the radish is enough.
luó bo duì bàn qiè kāi cháo zhe yī gè fāng xiàng cā
萝卜对半切开,朝着一个方向擦
Cut the radish in half and shred it in one direction.
shèng xià yī diǎn bù yào zài cā le
剩下一点,不要再擦了
When it becomes very small,
xiǎo xīn bǎ shǒu zhǐ huà pò
小心把手指划破
be very careful with your fingers.
yòng dāo qiè sī jiù hǎo
用刀切丝就好
Or cut it with a knife.
zhè yàng yī gè fāng xiàng cā luó bo cā chū lái de sī zhǎng duǎn shì yī yàng de
这样一个方向擦萝卜,擦出来的丝长短是一样的
Shred radish in one direction, the length of the shreds is the same.
ér qiě bù huì yǒu suì zhā zi
而且不会有碎渣子
And there is no small pieces.
shēng luó bo de wèi dào bǐ jiào chōng yī xiē
生萝卜的味道比较冲一些
Raw Daikon radish is very strong in taste.
bǎ tā yòng kāi shuǐ tàng yī xià
把它用开水烫一下
Blanch it in boiling water.
hěn duǎn zàn dà gài miǎo
很短暂,大概15秒
Very quickly, about 15 seconds.
rán hòu guò lěng shuǐ
然后过冷水
Then cold water.
chù lǐ zhī hòu luó bo de wèi dào jiù huì biàn dé róu hé
处理之后,萝卜的味道就会变得柔和
After blanching, the radish becomes mild in taste.
ér qiě hái dài yī diǎn cuì cuì de kǒu gǎn
而且还带一点脆脆的口感
It is still crunchy though.
jǐ diào duō yú de shuǐ fēn
挤掉多余的水分
Squeeze out excess water.
luó bo duǎn zàn chāo shuǐ tā shì bù huì duàn kāi de
萝卜短暂焯水,它是不会断开的
Although the radish is briefly blanched, it won't break.
fěn sī yě tàng yī xià
粉丝也烫一下
Boil the Chinese vermicelli as well.
yī fēn zhōng zuǒ yòu gāng gāng biàn ruǎn jiù lāo chū lái
一分钟左右,刚刚变软就捞出来
In about a minute, pulled it out when it just became soft.

Cold water.
qiè kāi

Cut.
yī gēn là jiāo
一根辣椒
A red chili.
wǒ yòng de là jiāo bù shì tè bié là
我用的辣椒不是特别辣
The chili I use is not so spicy.
rú guǒ nǐ yī diǎn là dōu bù chī kě yǐ dà là jiāo dài tì
如果你一点辣都不吃,可以大辣椒代替
If you don’t eat spicy at all, you can use a bell pepper instead.
qù zǐ zhī hòu xiān qiè sī hòu qiè suì
去籽之后,先切丝,后切碎
After removing seeds, shred first, then cut into small pieces.
sì gēn xiǎo cōng
四根小葱
Four green onions.
qiè cōng huā
切葱花
Cut green onion.
pào guò de xiā rén
泡过的虾仁
Soaked shrimp.
qiè xiǎo kē lì
切小颗粒
Cut small.

材料准备好了,我们来拌馅
The ingredients are ready, let's prepare the filling.

先把萝卜打散
First break open the radish.
fàng rù fěn sī
放入粉丝
Add Chinese vermicelli.

red chili,

ginger paste,
wǔ xiāng fěn
五香粉
five-spice powder,
bái hú jiāo fěn
白胡椒粉
white pepper,

最后把葱花放在上面
finally put the green onion on it.
yóu shāo dào mào yān
油烧到冒烟
Heat up the oil until smoke.
pō zài cōng huā de shàng miàn
泼在葱花的上面
Splashed on top of green onions.
cōng de xiāng wèi pō chū lái
葱的香味泼出来
The fragrant of green onions is brought out by the hot oil.
zuì hòu fàng rù háo yóu
最后放入蚝油
Finally add oyster sauce,
xiāng yóu
香油
sesame oil,
hé yán
和盐
and salt.
xiàn liào bàn hǎo le wǒ men kě yǐ bāo xiàn bǐng le
馅料拌好了,我们可以包馅饼了。
The filling is ready, we can wrap the pie.

手上抹一点油
Apply a little oil on your hands
jiū yī gè xiǎo tuán miàn
揪一个小团面
Grab a small dough.
miàn jīn yǐ jīng wán quán fàng sōng le
面筋已经完全放松了
Gluten is completely relaxed.
hěn qīng sōng jiù kě yǐ bǎ tā chě zhǎng
很轻松就可以把它扯长
It’s easy to pull it long.
děng yī xià nǐ bāo de shí hòu jiù huì bǐ jiào róng yì
等一下你包的时候,就会比较容易
It will be easier when you wrap the pie.
guāng miàn cháo xià qīng qīng bǎ miàn tuán lā kāi
光面朝下。轻轻把面团拉开
Smooth side face down. Gently pull the dough open.
fàng shàng xiàn liào
放上馅料
Put on the filling.
shùn zhe miàn jīn de lì liàng bǎ xiàn bǐng bāo qǐ lái
顺着面筋的力量把馅饼包起来
Wrap the pie along the strength of gluten.
rú guǒ miàn jīn méi yǒu táng dào yìng chě huì duàn kāi
如果面筋没有饧到,硬扯会断开
If gluten has not been relaxed enough, it will break.
xiàn bǐng jiù huì pò pí
馅饼就会破皮
The pie will fall apart.
zuì hòu fēng kǒu
最后封口
Final seal
nǐ kàn bāo hǎo zhī hòu wǒ de shǒu gàn gàn jìng jìng de yě bù huì zhān miàn tuán
你看,包好之后我的手干干净净的,也不会粘面团
You see, after wrapping it, my hands are clean and not stick to the dough.
guō lǐ dào yóu
锅里倒油
Pour oil in the pan.
fēng kǒu cháo xià fàng dào guō lǐ
封口朝下,放到锅里
Put it in the pan with the sealed side facing down.
yòng shǒu bǎ xiàn bǐng yā biǎn
用手把馅饼压扁
Flatten the pie by hand.
wǒ yā xià qù de shí hòu nǐ kě yǐ kàn dào tā de miàn pí yǐ jīng hěn báo le
我压下去的时候,你可以看到它的面皮已经很薄了
When I pressed it down, you can see the dough wrap become very thin.
ér qiě yě bù huì pò
而且也不会破
And it won't break.
dǐ miàn dìng xíng zhī hòu fān miàn
底面定型之后,翻面
After the bottom is gentled cooked, turn it over.
gài shàng gài zi lào yī huì
盖上盖子烙一会
Cover and cook for a while.
zuì hòu dǎ kāi gài zi bǎ liǎng miàn lào dào jiāo huáng
最后打开盖子,把两面烙到焦黄
Finally, open the lid and cook both sides to brown.
jiù kě yǐ chū guō la
就可以出锅啦
It is ready to serve.
bāi kāi kàn kàn lǐ miàn
掰开看看里面
Open one and let's see inside.
miàn pí hěn ruǎn ér qiě hěn báo
面皮很软,而且很薄
The dough is very soft and thin.
yóu qīng qīng de jiān guò zhī hòu chī qǐ lái fēi cháng xiāng
油轻轻的煎过之后,吃起来非常香
After lightly fried, it tastes delicious.
ér xiàn liào de wèi dào hěn fēng fù
而馅料的味道很丰富
And the filling is very rich,
tè bié shì luó bo tā wèi dào róu hé
特别是萝卜,它味道柔和
specially radish. It tastes mild.
xī shōu le háo yóu hé cōng yóu wèi dào biàn dé fēi cháng xiān měi
吸收了蚝油和葱油,味道变得非常鲜美
It has absorbed oyster sauce and scallion oil, it is full of umami taste.
zhè shì yī dào fēi cháng měi wèi de luó bo sī bǐng zǔ hé
这是一道非常美味的萝卜丝饼组合
This is a very delicious combination of radish pie.
